I had hoped to have this blog up and running before I started school, but, well...life. I've had two days of classes, but I'll get to that later. My goal is to write at least once a week, covering the lab portion of my Culinary Skills class since that's the hands-on learning most people think of when they hear the words "culinary school." If I manage to record stuff about the lectures, or my classmates, or my other (terrifying) class on sanitation and safety, so much the better. And if I can post some pictures of food I've made, or write about my awesomely supportive family, then I'll be doing three thousand times more than I (or you, dear reader) should expect.
But for now, I have to go review knife cuts before tomorrow's lab. Actually, that's what I was doing when I came across the sentence that is the title of this blog. The title being the hurdle I couldn't jump in getting this thing online in the first place. Titles are hard. But I like this sentence; it captures, for me, everything that is wonderful and scary about this journey I'm taking. A falling knife has no handle. You have to kill your instinct to grab and grasp and catch. You have to let the thing fall. And you have to get your toes out of the damn way.
